Coconut Overview

The coconut palm  is a member of the family Arecaceae (palm family). It is large, growing up to 30m in height, with pinnate leaves. The term coconut refers to the fruit of the palm. The palm is grown throughout the tropical world, for its decorative as well as for its culinary and non-culinary uses.
The coconut is a dry nut known as a fibrous drupe. The husk is composed of fibers called coir and there is an inner stone. The endocarp is the hardest part. It has three germination pores, visible on the outside surface once the husk is removed. Although coconut meat contains less fat than other dry nuts such as peanuts and almonds, it is noted for its high amount of saturated fat. The endosperm surrounds a hollow interior space, filled with air and often a liquid referred to a s coconut water, not to be confused with coconut milk. Coconut water from the unripe coconut, however, can be drunk fresh.

Coconut Seed

The white, fleshy part of the seed is edible and used fresh or dried in cooking. The cavity is filled with coconut water which contains sugar, fiber, proteins antioxidants, vitamins and minerals. Coconut water provides as isotonic electrolyte balance, and is a highly nutritious food source. It is used as a refreshing drink throughout the humid tropics and in isotonic sports drinks. The roots are used as a mouth wash, and a medicine for dysentery. A frayed out piece of root can also be used as a tooth brush.
Coconut oil



Coconut oil is one of the best natural nutrition for hair.  Regular massage of coconut oil helps prevent dandruff and gives shine to the hair.  It acts as an effective moisturizer on all types of skins including dry skin.  There is no chance of having any adverse side effects on the skin with the application of coconut oil.  Coconut oil helps in preventing premature aging and degenerative diseases due to its antioxidant properties. Coconut water


Coconut water can be used as an intravenous fluid. Oil can be extracted from the fresh flesh, and used in many ways, including as a medicine and in cosmetics, or as a direct replacement for diesel fuel. The leaves provide materials for baskets and roofing. The husk and shells can be used for fuel and are a source of charcoal. The stiff leaflet midribs can be used to make cooking skewers or are bound into bundies, brooms and brushes.  Dried coconut leaves can be burned to ash, which can be harvested for lime. Dried half shells are used as the bodies of musical instruments. Coconut trunks are used for building bridges, and are preferred for their straightness, strength and salt resistance.

Coconut milk

Coconut milk is made by processing grated coconut with hot water or milk, which extracts the oil and aromatic compounds. When refrigerated and left to set, coconut cream will rise to the top and separate the milk.
While coconut milk is high in saturated fat, it is much healthier than other saturated fat products, and the fat is easily metabolized by the body. Coconut milk also offers some particular health benefits. It is anti-carcinogenic, anti-microbial, anti-bacterial, and anti-viral. The main saturated fat that it contains, lauric acid, is also found in mother's milk and has been shown to promote brain development and bone health. Some hope that coconut milk, with its powerful anti-viral properties, can one day be used in the fight against AIDS.

The sap derived from incising the flower cluster of the coconut is fermented to produce palm wine, also known as toddy. The sap can also be reduced by boiling to create a sweet syrup or candy. Broccoli

1 lb raw = 5 cups
1 lb cooked = 2 cups

Broccoli, a member of the cabbage family and a close relative of cauliflower.  Broccoli is available year round, but it grows better in cool weather, so it can be in short supply in July and August.

When buying broccoli look for firm, compact clusters of small flower buds, with none opened to show the bright yellow flower. The bud clusters should be dark green or sage green, and even green with a purplish tinge. Stems should not be too thick or tough.
Avoid: Enlarged or open buds, yellowish green color or wilting.  Avoid soft, slippery, watersoaked spots on the bud cluster, this is a sure sign of decay.


Storage and handling: Refrigerate in a loosely sealed plastic bag for up to 3 days. When ready to cook, separate stalks from florets. Trim ends and peel stems with paring knife, and cut into bite-sized pieces. Wash thoroughly.

Preparation: Steam in basket over water by covering and cooking 7 minutes, depending on size and age. Microwave bite-size pieces in a covered dish with small amount of water, 5-7 minutes. To avoid loss of the bright green color do not cook broccoli for longer than 7 minutes.

Nutrients: Vitamins A, C, K, folate; cancer-preventing compounds sulforaphane, isothiocyanate and indoles; fiber.

Broccoli florets contain most of the phytochemicals in broccoli. Broccoli should be kept just slightly above the freezing point from harves to eating to preserve its nutritional value.  Actually, frozen broccoli likely provides more nutritional value than fresh since florets are processed right after picking.

Broccoli has been around for more than 2000 years, The name "broccoli" comes for the Latin word brachium, which means "branch," or "arm." Americans have grown it in their gardens for only about 200 years! The first commercially grown broccoli was grown and harvested in New York, then planted in the 1920's in California. A few crates were sent back East and by 1925 the broccoli market was off the ground. This vegetable is highly recognized for its anti-cancer nutrients. It is a cruciferous vegetable and member of the cabbage family which is helpful in preventing certain types of cancer
Varieties
Broccoli was first grown in the Italian province of Calabria and was given the name Calabrese. Today there are many varieties. In the United States, the most common type of broccoli is the Italian green or sprouting variety. Its green stalks are topped with umbrella-shaped clusters of purplish green florets.

That broccoli consumption has increased over 940 percent over the last 25 years! It's a good source of Vitamin A, and vitamin C, potassium, folacin, iron and fiber. Broccoli has as much calcium ounce per ounce as milk and contains a few important phytochemicals: beta-carotene, indoles and isothiocyanates. Phytochemicals prevent carcinogens (cancer causing substances) from forming. They also stop carcinogens from getting to target cells and help boost enzymes that detoxify carcinogens. So next time you sit down to eat and broccoli is on the menu. Remember it really is good for you!

How To Select Fresh Broccoli
Choose bunches that are dark green. Good color indicates high nutrient value. Florets that are dark green, purplish, or bluish green contain more beta-carotene and vitamin C than paler or yellowing ones. Choose bunches with stalks that are very firm. Stalks that bend or seem rubbery are of poor quality. Avoid broccoli with open, flowering, discolored, or water-soaked bud clusters and tough, woody stems.


Storage
Store broccoli unwashed, in an open plastic bag and place in the crisper drawer of refrigerator. It is best if used within a day or two after purchasing.

Fresh vs. Frozen
Packaged frozen broccoli differs from fresh in its nutrient content. The flower buds or florets are richer in beta-carotene than the stalks. Manufactures typically cut off most of the stalk before packaging it, so frozen broccoli may contain 35% more beta-carotene by weight than fresh broccoli. The downside is that frozen broccoli has twice as much sodium as fresh (up to 68 mg per 10 oz. package), about half the calcium, and smaller amounts of iron, thiamin, riboflavin, and vitamin C.


Preparation and Cooking
The best way to cook broccoli is to steam, cook in the microwave or stir-fry with a little broth or water. These methods are better than boiling. Some of the vitamin and mineral content are lost from the vegetable and end up in the cooking water when they are boiled. Cooked broccoli should be tender enough so that it can be pierced with a sharp knife, and still remain crisp and bright green in color

Eat florets as a nutritious snack. Try them with a low-fat dip, or include them in your favorite salad. Think about adding two vegetables to your dinner menu, and include broccoli or another cruciferous vegetables several times a week.

Turkey Burgers with Caramelized Red Onions


You don’t have to be a certified nutritionist to realize that ground turkey is healthier than beef. Just try washing ground beef sludge off your hands after molding it. It takes 5 minutes to get clean. But turkey rinses away almost instantly. I created this recipe while in Denver visiting my brother, who has a heart condition and eats healthy. The caramelized onion makes these burgers. The curry powder is just enough to give it a richer savory flavor, and not enough to overpower. We ate them as mini meatloaves with baby roasted potatoes and roasted veggies on the side, but you can build your standard burger sandwich with them just fine.


Burger ingredients
Ingredients:
1 lb ground turkey breast
1 TBSP olive oil
1 red onion, sliced in rings and then half.
1 egg
2 TBSP chopped fresh parsley, or some dried
¼ to ½ tsp curry powder
½ to 1 tsp garlic powder
A few shakes of Worcestershire Sauce
Generous amounts of salt and pepper


Caramelized Onions

Turkey BurgersTo caramelize onion, sauté in pan with the olive oil over medium/low heat for about 15 minutes until glossy and soft, almost burned. Stir about once a minute. You will need to watch constantly to keep from actually burning. Set aside to cool a little before adding to meat mixture.
Mix remaining ingredients with the turkey and then combine the onion. Form into patties.

Grill or cook in skillet with a few drops of olive oil, until center is cooked through. Well done is best.

Slimming tea is an herbal product that includes approximately 25% tea. Perhaps, the manufacturers and marketers are trying to latch onto the benefits of other pure teas by creating a beverage that is said to stimulate weight loss.
However, these herbal concoctions are filled with laxatives. There is a time in everyone's life when a laxative may be warranted. Use for weight loss is not one of those times. Among the possible side effects of the use or abuse of these brewed beverages are:
  • Diarrhea
  • Stomach cramps
  • Nausea
  • Vomiting
  • Fainting
  • Chronic Constipation
  • Dehydration
  • GI Tract problems
  • And possibly death from extended abuse by those who suffer from anorexia or bulimia



These side effects may not manifest with occasional use or the first use. However, for some who have "delicate" systems, diarrhea and stomach cramps may occur after the first cup. It must be noted that there are times when the product is useful, especially if one is suffering from constipation. However, it must be further noted that extended use of laxatives in any form will make the body become dependent on them to stimulate the bodily functions. The end result may be that the very product one uses to override constipation may create a never ending cycle on dependency and necessity.
It goes without saying that pregnant women should not use the products during the nine months of pregnancy as there could be disastrous results.
Generally, nausea and vomiting follow more than the occasional use. Fainting and dehydration go hand in hand. Often these side effects follow repeated daily use. While death is not likely to be attributed to drinking a laxative filled product, it is understandable that extended use followed by vomiting, dehydration and fainting could eventually lead to death.
Of particular note, many anorexia nervosa sufferers and those who experience bulimia are more likely to suffer the dire consequences of taking, or drinking, these slimming products daily. The psychological dependence can lead to physical dependence and to death. While no one is suggesting that any of the products are directly responsible for death, the abuse of any weight loss product by someone with a weight related disease should be a consideration.
Perhaps, there is a place for these products in the cupboard, especially for those times when a laxative is needed. However, before using these products as a weight loss tool, one should be fully aware of the consequences that can arise from regular use or abuse.


Jena Jackson, a nutritionist, lost a friend to anorexia nervosa. The friend insisted that drinking "slimming tea" had more benefits than risks. However, as Jena learned upon further inspection, many of the so-called all natural herbal weight loss products contain natural laxatives that can create more problems than they cure.
Jena insists that almost anything in moderation or occasionally, as needed, will not kill you. However, with the weight loss obsession across the nation today, she feels that too many people are looking for short cuts and willing to do or try anything to accomplish their weight loss goals. While Jena maintains that a healthy lifestyle should include a balanced diet filled with fresh vegetables and fruits and at least a half hour of physical exercise a day.

I personally love all Indian food. The spices, the taste, everything about it. If I had my way, I'd be eating Indian food every single day. Of course, at that point I'd probably get tired of it and write an article about how to avoid Indian food. But for now, I enjoy it. Here is my list of the Top 10 foods that you have to try if you ever go to an Indian Restaurant. The list is in order of my most favorite to my somewhat favorite. Rest assured, all the things on this list are great!
  1. Chicken Tikka Masala - boneless pieces of chicken, baked in a tandoor oven, after being marinated in spices and yogurt. I usually get this extra extra spicy, and its good enough to clear your nose, throat and eyes. Eat it with rice, and you will have one of the best meals you've ever tasted.
  2. Tandoori Chicken - This is chicken that is roasted and flavored with masala and spices. When I was little, I called it the "red chicken". It gets its distinctive color from the turmeric that it is cooked with.
  3. Shrimp Tikka Masala - same as #1 except its shrimp. This one is great for the seafood lovers. You haven't lived until you've tried shrimp baked with yogurt and spices with a little bit of rice. I recommend getting the super spicy version for this one as well.
  4. Chicken Vindaloo - Curried chicken with potatoes. This one is a mouthwatering treat and is usually reasonably priced at most restaurants. Tastes great, and definitely fills you up.
  5. Chicken Biryani - This is chicken mixed with fried Basmati Rice. You get the meat and the rice in one meal, and you can adjust the spiciness to your liking. Add some chutney for a tangy taste!
  6. Beef Curry - Indians curry everything. Beef curry is one of their best ventures. The curry is thick and delicious, and the beef is very often nice and tender. Rice is a definite with this meal.
  7. Goat Rezala - Goat cooked with an onion based sauce. Sounds delicious, and it is. A sweet and sour treat.
  8. Lamb Rezala - Same as #7 except with lamb. You'll enjoy the yogurt, onions and raisin flavor, and you'll be happy you bought this one.
  9. Lamb Biryani - Fried rice with lamb. Need I say more?
  10. Lamb Korma - Lamb stew in a yougrt, nuts and raisin based sauce. It'll make you wonder how you lived without it for so long!

When I was first diagnosed with Type II diabetes, I thought I would never be able to enjoy anything in the sweets line again.  You see, my grandparents and my mother were Type II Diabetics.  I remember tasting some of the foods they made with the early artificial sweeteners and frankly, I thought they were awful.  I am happy to say, things have greatly improved over the years.  I have done extensive studying on diet and diabetes and have gone to nutritional counseling.  The "sweeteners" of today are exceptional and much has been learned about dieting and diabetes.  In my case, eating potatoes raises my blood sugar more than occasional sweets.  I am pleased to say, today's recipes are very good.  Here is an example of a very good quick bread.


BANANA APPLE BREAD
1/2 cup butter or margarine
1 cup Splenda granular
2 tbsp sugar
2 eggs
1 3/4 cups all-purpose flour
2 3/4 tsp baking powder
3 med bananas, chopped
1 cup peeled, coarsely chopped apple
Vegetable cooking spray
Preheat oven to 350 degrees.  Spray a loaf pan with cooking spray and set aside.

Cream butter in a large mixing bowl
.  Gradually add the Splenda and sugar to the butter, beating at medium speed of an electric mixer until light and fluffy.  Add eggs and beat until thick and lemon colored.
Combine the flour and baking powder; add to the butter mixture, mixing well.  Fold in the bananas and apple.  Spoon batter into the prepared loaf pan.  Bake at 350 degrees for 1 hour and 5 minutes to 1 hour and 10 minutes or until a wooden toothpick inserted in the center comes out clean.  Cool in the pan 10 minutes.  Remove from the pan and cool completely on a wire rack.

We enjoy camping and hiking during the Summer season here on the East Coast 4-6 months of every year. As seasoned campers, we prefer to make our own snack mixes to take along.

All of these recipes are easy to make. If you are going camping, store the snack mixes in plastic containers. If you are going hiking, you can place the mix into a plastic zipper close bag. You will want to make sure that you keep the moisture out.

Mountain Trail Mix

1 cup pumpkin seeds
1 cup raisins
1 cup salted peanuts
1 cup small pretzel sticks
1 cup plain M&M's chocolate coated candies
1 cup oyster crackers
1 cup sunflower seeds


Using a large bowl, combine all of the above ingredients together in the order that they are listed. Store mixture in airtight containers. This recipe will make seven 1 cup servings.

Tangy Nut Mix

4 cups salted roasted peanuts
1/3 cup barbecue sauce
2 Tablespoons grated Parmesan cheese

Preheat oven to 300 degrees. In a medium bowl, combine nuts and barbecue sauce, stir until coated. Spread mixture onto an ungreased cookie sheet. Sprinkle with Parmesan cheese. Bake in a 300 degree oven for 20-25 minutes or until nuts are dry. Place on waxed paper to cool. Once cool, store in an airtight container.

Savory Pretzels

2 bags broken salted pretzels
1/2 lb. butter, softened
1/4 cup Worcestershire sauce
1 envelope onion soup mix


Melt butter in your microwave. In a medium-sized bowl, combine soup mix and Worcestershire sauce. Pour mixture over pretzels and mix well. Cover and let stand until all of the liquid is absorbed, stirring every once in awhile to coat mixture. Place pretzels pieces in a warm 250 degree oven for 1 to 1 1/2 hours. The longer you bake them, the crunchier the pretzels will be. Once cool, store in an airtight container.

If you are tired of making just the plain old baked potato for your family dinners, I have 3 recipes that I would like to share with you.

All of these recipes require you to bake your potato, either in your oven or your microwave. For the best results, I recommend oven baking. If you like sour cream, you can certainly add a dollop of that onto the potato once you remove it from the oven.

Classic Twice Baked

4 white potatoes
salt and pepper to taste
1/4 cup milk
3 tablespoons butter
shredded cheddar cheese

Bake your potatoes until done. Remove and let slightly cool. Cut in half lengthwise and scoop out the pulp. Place pulp in a blender container with salt, pepper, milk and butter. Blend on low speed until creamy. Spoon filling back into potato halves and sprinkle with some shredded cheese. Place back into a 350 degree oven for 10 minutes or until cheese has melted.


Potatoes Suzette

6 medium white potatoes
3 tablespoons butter
1/2 cup of warm milk
salt and pepper to taste
bread crumbs
2 tablespoons cheddar cheese
6 eggs

Bake potatoes in a 350 degree oven until done. Remove from oven and slice the tops off each one. Scoop out the inside pulp and place in a blender container along with milk, butter, salt and pepper. Blend until smooth and creamy. Fill each shell with pulp mixture and then make an indentation in each. Break an egg into the indentation and sprinkle bread crumbs and shredded cheese on top. How to cook chicken Manchurian


Firstly marinating of the chicken is important. Prepare the marinating mixture. Mix all purpose flour, salt, corn flour and eggs in a mixing bowl. If the batter appears a little thick then one may add a little cold water to it. Cold water provides consistency to the batter and makes it good enough for marinating. Coat all the pieces of chicken with the batter and keep them for sometime.

Next step involves heating the oil in a deep sauce pan. After the oil is properly heated put into it the pieces of marinated chicken slowly one by one. The flame of the gas must be kept really slow so as to prevent the pieces from roasting. A high flame may cook the marinated chicken only from outside and the inner part may remain uncooked. Thus always keep the flame slow. The chicken must be cooked till it turns light brown in color. This is an indication that the chicken is properly cooked.


Now we will prepare sauce for the Manchurian. For preparing the sauce one must heat a little oil in a deep sauce pan and then add garlic to it. Next step includes adding the pineapple pieces to the pan followed by the chili garlic sauce, the tomato ketchup and the tomato paste. All should be mixed properly in the pan to make it a homogeneous mixture. This should be cooked properly on the medium flame for around two or three minutes. Thus when one sees a little boil in the mixture then it is considered to be cooked properly.

Next add the pieces of fried chicken to the mixture. After that add the powdered red chili & the crushed chili. Then add salt according to taste and water according to the requirement.

Next stir the mixture properly with light hands to make sure that everything is properly cooked.

Add a little corn starch and cook the mixture for a few minutes.
