--Chick-Fil-A Chicken Sandwich--
3 cups peanut oil
1 egg
1 cup Milk
1 cup flour
2 1/2 Tb. powdered sugar
1/2 ts. pepper
2 teas. salt2 skinless, boneless chicken breasts, halved
4 plain hamburger buns
2 Tb. melted butter
8 dill pickle slices
Heat the peanut oil in a pressure cooker over medium heat to about 400 degrees.

In a small bowl, beat the egg and stir in the milk.
In a separate bowl, combine the flour, sugar, pepper, and salt.Dip each piece of chicken in milk until it is fully moistened.
Roll the moistened chicken in the flour mixture until completelycoated. Drop all four chicken pieces into the hot oil and close thepressure cooker.
When steam starts shooting through the pressurerelease, set the times for 3 1/2 minutes. Important: Do NOT close the steam release!
While the chicken is cooking, spread a coating of melted butteron the face of each bun.
When the chicken is done, remove it fromthe oil and drain or blot on paper towels.
Place two pickles oneach bottom bun; add a chicken breast, then the top bun. To makea deluxe chicken sandwich, simply add two tomato slices and aleaf of lettuce.
Mayonnaise or mustard also goes well on this sandwich.


--Chick-Fil-A Coleslaw--
6 cups shredded cabbage
1/4 cup sugar
1 cup shredded carrots
1/2 tsp. salt
1/4 tsp. pepper
1/4 - 1/2 cup milk
Mix & Chill 15 minutes.
Meanwhile combine:
1/2 cup mayonnaise
1/2 tsp. celery seed
2-3 drops hot sauce
3 Tbsp. dry minced onion
1/4 - 1/2 cup buttermilk
Mix well with cabbage.
Chill.
Allow flavors to blend forseveral hours before serving.


--Chick-Fil-A Chicken Nuggets--
2 Cups Chicken Breast (Boneless, Skinless, Cubed)
1 Cup Flour
1-1/2 Cups Cracker Meal
1/4 teaspoon Paprika
2 Cups Water
2 Chicken Bouillon Cubes
2-1/4 teaspoons McCormick Season-all
Place cool water in bowl, add 1/4 teaspoon season-all and dissolve bouillon cubes in mixture.
Place cubed chicken in water, mix, cover and place in refrigerator for 12 hours ornext day.
When ready to cook nuggets, mix flour, cracker meal, 2 teaspoons season-all and paprika in bowl.
Heat oil for deepfrying. Drain chicken.
Coat nuggets in flour, cracker mixtureand fry until golden.
Chicken will be flavorful and juicy.


--Chick-Fil-A Chicken Salad--
2 Cups Cooked Chicken Breast
1/3 Cup Finely Diced Celery
1 hard boiled egg, minced
1/4 teaspoon Salt
1/2 teaspoon Sugar
1/4 teaspoon Freshly Ground Pepper
1/3 Cup Sweet Pickle Relish
2/3 - 1 Cup Mayonnaise
Texas Toast or Thick Cut Sandwich Bread
Boil chicken until completely cooked.
Remove from water and cool meat.You can save the chicken broth, seal and refrigerate no more than a week.After chicken is cool, cut into tiny pieces.
Place in a mixing bowl withall other ingredients and mix well. Butter one side of sandwich bread andgrill. Place salad in between grilled bread slices and serve.

The concept of farm-to-table dining is not a new one, especially for those of us in the culinary profession.  Chefs and restaurateurs have always enjoyed offering guests dishes prepared with the finest, freshest, and most wholesome ingredients.   And after all, who wouldn't want to help preserve the environment.  Which leave only one major question, has consumer demand for Organic, Sustainable, and Slow Food reached the tipping point of becoming the "Next Big Thing" in dining.
Back when I was studying culinary arts, I had a rare opportunity to spend a day in the kitchen with legendary chef Edna Lewis.  Although I loved the culinary wisdom that Mrs. Lewis generously shared; I loved her stories even more.  She told me about how she learned to cook as a little girl growing up in Freetown Virginia.  She explained how her family would prepare meals with vegetables fresh from the field and livestock that was freshly butchered.  As a young chef her stories left an enduring impression.

Flash forward more than a decade to 2005 and I find myself living minutes south of San Francisco;  overseeing restaurant operations for a foodservice company with units through the Silicon Valley.  In the Bay Area, at this time, Farm-to-table, Organic, Slow Food, and Sustainable Food are all the rage.  In fact, the Whole Foods store near my home is constantly so crowded one can expect to wait just for parking.  In addition, mainstream supermarkets like Safeway have their own "Organic" line of products.  From this vantage point,

America's relationship with food seems to have traveled full-circle.
Now, just four years later the farm-to-table moment continues to grow.  The White House has its own symbolic kitchen garden,  farm-to-table restaurants in Boston are reporting healthy sales in the midst of a bad recession, and chefs all over the country are extolling the virtues of the farm-to-table movement.  So, it would seem that now is the time to jump in with both feet.  This may be the case, but before you do, consider and prepare for the following:
  • Locally and organically grown products are generally more expensive, which means your target market must be willing to pay a premium.
  • Depending on your location seasonal availability of some products can prove to be a challenge.
  • If you choice to fully embrace localism 100%, you may put some of the World finest signature products off limits. 

    (Main Lobster, Greek Olives, New Zealand Lamb, etc.)
  • As a chef you must be prepared to change your menu frequently,  as small local supplier encounter unexpected shortages.

Many people think that Italian cuisine is limited in scope and variety, but this is a misconception. But historically, Italy was actually composed of various empires and even republics, which now make up its different regions. For instance, Veneto was the Seat of the Venetian Republic a few centuries ago. That is why Italian cuisine is as diverse as its many different regions. This means that most of us have most likely sampled different dishes from Italy's different regions, as there is no such thing as just one kind of Italian cuisine. But among the regional cuisines, Tuscan cooking has an incomparable lightness to it that is perfect to those with timid palettes.

Tuscany, whose capital is Florence, is home to the famous Cathedral of Pisa and five other UNESCO protected sites.

Tuscany's simple cuisine is a contrast to its colorful culture. Local Tuscan cooks have to master the art of restraint and appropriate seasoning if they are to be considered experts in Tuscan cuisine. Because they have to limit the use of their imagination and refrain from using thick, bold sauces, local Tuscan cooks' jobs prove to be more challenging than others. These cooks must stick to remaking old dishes as they were prepared centuries ago.

Tuscans can use vegetables liberally because of the simplicity of their cuisine. Minestrone, a popular dish often found in Tuscan Restaurants, is made with the freshest local produce including Cannellini beans (white kidney beans), black cabbage, and olive oil. "Ribollita" is an original Tuscan variant of minestrone made by boiling the soup twice to improve quality.

  1. Remove all fat and skin from chicken; rinse and pat dry, sprinkle with salt, pepper and garlic powder.

General Cooking Tips When Cooking With A Crock Pot
  • When you are cooking with a crock pot the key is to let it cook uninterrupted (no lifting the lid). When you lift the lid to check the food you lose valuable heat and moisture. With crock pot cooking you can also reduce time by using the high setting and cutting the time in half then adding one hour. Example with this recipe, it calls for 8 hours of "Low" temp cook time. You can reduce it to 4 to 5 hours cook time on the "High" temp setting.
  • When cooking with a Crock Pot, only fill the bowl to two thirds full, If you fill it fuller than that the food will not cook properly.
