Everyone knows eating delicious Chinese food usually comes with a price: all those sodium, extra fat, and high-calorie dishes don't bode well for those watching their diets. Your typical Chinese restaurant will pile on the oil and salt in order to maximize the taste and decrease their costs. Fresh ingredients usually cost more, and unless you are at high-end Asian dining establishment, expect the extra oil and salt (hidden in soy sauce, table salt, and oyster sauce, just to name a few) to end up on your plate and in your stomach.
The good news is that you can learn to make yummy Chinese food at home, which ensures you'll be the master of your kitchen and be able to regulate exactly what goes in your Eastern meal.



1. First, grab your Chinese recipe. Google any good stir-fry recipe to get you started.
2. Find a wok and turn up the temperature. A wok is better than a regular pan since it distributes the heat more evenly, allowing your food to cook faster and thus soak up less oil. Cooking a a higher temp increases that effect.
3. Use fresh, raw veggies. Don't be tempted to use canned vegetables. Most are canned in salt water, not to mention the canned versions are far less superior nutrient-wise.


4. For harder-to-find items such as water chestnuts: depending upon your grocery store's selection, you may be forced to purchase bamboo shoots and water chestnuts canned. Be sure to check the ingredients. If they are packed in sodium (more than likely), rinse well in a colander before adding to your stir-fry. This will help reduce some of the extra salt, though not entirely.
5. Whereas the Chinese restaurants will use extra oil and salt to add flavor, not you! Find fresh garlic (right off the clove!) and grind fresh ginger (right off the root). Fresh ingredients add full flavor the healthful way!
6. Steam, steam, steam! To save on time, most Chinese restaurants don't have your health in mind and instead throw all their food directly on the stove and let the oil do its magic. Here's the biggest tip of them all: steam your veggies between 1/2 and 3/4 of the way done before adding it to the wok. This greatly decreases the time your food spends cooking and soaking up the oil (especially important for porous ingredients like onions) and doesn't take away from that signature stir-fried taste. I even do this with chicken. Place your chicken an aluminum-covered glass dish and bake until still slightly pink. Simply let the wok finish the job.


7. Be conscious of your the type of oil you use. Chinese food and a healthful oil like virgin olive don't exactly go hand-in-hand; however that doesn't mean you should immediately reach for the peanut oil. Try finding a health vegetable oil and mix just a tad of sesame oil for that custom Chinese flavor. You get the good stuff without sacrificing the taste.
8. Finally, do as the Chinese do and make rice and veggies your staple: serve fat-full meats sparingly and make the rice and vegetables your main dish. Even better, swap the the white rice for the whole-grain brown variety.

Avoid raspberries because of the seeds.

Reviving Veggies: Did you know?
We have all been taught that we can revive celery by placing it in a container of cold water and let it sit in the refrigerator but did you know, you can do that to other vegetables too?
My lettuce had become wilted, but not brown on the edge of the leaves. I tore the wilted leaves from the core of the head [do not use a metal knife as it will darken the leaves] and emerged them in iced water for 10 to 15 minutes. You will want to drain the water and place the lettuce on a towel to dry before quickly placing them in a plastic bag and back in the veggie drawer of your refrigerator.

You can also, stand them, with the torn ends in a glass of water in the door of the fridge for a day. The water needs to be about two to three inches deep in the glass. I was pleased to see that the wilted leaves came back to their original crispy fresh state. I have even resurrected other greens using the glass method.
Radishes, spring onions and carrots can be brought back to life for future use with this tip, also. I hate to waste food and I'm not fond of wilted lettuce leaves in salad so this was a delight to discover. Not only did I not waste the food (and money I spent on it), but I also could enjoy it longer in its revived state.


Substituting: Did you know?
What!?, there's no eggs in the house and you have already started mixing the brownies. Mayonnaise can be used in place of the egg. You will get the same soft wonderful tasting brownie you have always had using 1/4 cup mayonnaise in place of the egg.
The same can be said for exchanging apple sauce for oil in a cake recipe. I have come to like the texture of the apple sauce so much in my cakes, I sometimes use it, even when I have oil.


If you want an exotic flavor in your next yellow cake, add 1/2 cup pumpkin pie mixture, instead of an egg or the oil. The pumpkin flavor and spices are an amazing surprise when biting into the cake.

I'm a pork lover. My family has been pork lovers since before I was born. Our family prefers to serve a roast pork loin at Thanksgiving rather than a roast turkey. I have been in search of the perfect pork loin for most of my adult life.
I searched the web to find recipes and cooking tips. I was surprised to also find some interesting food products for sale such as Napa Valley natural fruit purees, sashimi tuna, American Kobe Wagyu beef and a new item to me, Kurabuta pork, also referred to as Berkshire Japaneses Pork.


I came to learn, this pork variety has been celebrated in Japan and around the world for many reasons, but especially for its marbling and flavor, which are its most distinctive characteristics.
American Kurobuta Pork loin is lean, with small, fine streaks of marbling that make each cut sweet, tender, and juicy. Unlike traditional white pork that can have a tendency to be bland and dry, American Kurobuta pork is much darker in color and rich in flavor. In fact, the Wall Street Journal has dubbed it "The Other Red Meat." I wasn't sure whether to opt for either a bone-in rack which includes the pork ribs, and a boneless pork loin. I decided on the boneless.


My boneless pork loin arrived within two days of ordering and came packed in a Styrofoam cooler. Cooking pork has been a hobby of mine and I decided to keep this attempt simple. Garlic, olive oil, and Kosher salt. In the oven for 45 minutes at 350 degrees and left to rest on the counter for another ten minutes while I finished up the sides and accompaniments.
The pork roast cut like butter and the juiciness was amazing. As stated, the pork meat was slightly darker and had a complexity of flavors unlike grocery store pork. Although a little pricier than grocery store pork, this pork was worth every penny. I will definitely buy Kurobuta pork again and this time invite some friends to share in this gastronomic treat.

When making pizza, the taste will actually depend on the cooking process. In fact, for you to make a spicy and delicious one, the way you bake it will greatly determine the taste. Some ovens do not give the familiar and traditional taste and thus if you want this taste, then you need to always bake on the pizza stone.
Unlike when using the pan, the terra cotta tiles of the stone maintain the base layer crisp and you'll never have a soggy layer. This stone is available in different prices and must be accompanied by a paddle that is used for transferring the dish from hot stone. This enables the pizza to bake from both sides and comes out well crunchy. Paddles with long handles are mostly used and preferred ones.


Procedure for using a pizza stone is quite simple. First, put the stone in the oven and bake for about 15 minutes. Shake over the stone using a lump meal, make sure you shake the paddle of the stone open handed, using corn meal, put pizza bread on the paddle, mix the toppings into it carefully to prevent it from spoiling and use nippy jolting motions to transfer your dish from the paddle to the stone.



When you're done baking, ensure that the dish cools down before removing it from the microwave oven. Most important, remember not to put the stone in a hot microwave oven when it's cold. After cleaning, spread olive oil on the stone, do not use soap when cleaning.

Almost everyone who has ever cooked a beef brisket will tell you one thing first, and that is to always cook the brisket with the fat side up. The thinking is the fat, as it melts during cooking, drips its flavor onto and soaks into the meat, keeping it moist and making it tender.
The truth is the fat does not really soak into the meat at all, but runs down the meat and into the fire. This process causes the heat to fluctuate greatly while cooking, creating a very uneven and unpredictable barbecue cooking experience.
Cooking with the fat side down allows the fat on the bottom to just drip onto the heat source, creating delicious smoke flavor that rises back up and through to the meat. The connective tissue within the meat is what keeps it tender and moist. The tissue melts when the internal temperature of the meat reaches 160 degrees Fahrenheit. That moisture from the connective tissue releases into the meat, making it tender.


Using this fat-down method, you really do not have to buy the full-sized brisket (10+lbs.). You can cook the smaller, already-trimmed brisket that is common in many supermarkets, and is better suited for smaller families or groups.
One method of cooking beef brisket, using a charcoal grill, allows you to barbecue a brisket, or another large cut of meat, for up to 12 hours, keeping the heat low, slow and even. It is the perfect method for cooking overnight, as it pretty much does all the work itself.
Using a Weber Smokey Mountain Grill (smoker), or a grill similar to that, to cook this brisket slow and perfect.
1) Lay the brisket, with the fat side down, on a clean work surface. Trim off the hard fat, if any. Peel off the tough membrane that might be on the surface of the meat.
2) In a medium bowl, mix up a rub using 2 tablespoons of each of these ingredients:
-ground black pepper
-granulated sugar
-sweet paprika
-good chile powder
Also add and mix 2 teaspoons of each of these:
-garlic salt
-onion salt
-celery salt
-seasoning salt
Cover and rub in this mix all over the brisket. Put the brisket back into the refrigerator. Once the fire is ready, it will go straight to the smoker. This gives the brisket the best smoke ring.


3) Using a smoker like the Weber above, fill the bottom ring with a chimney starter full of unlit charcoal briquettes. Light another 15-20 briquettes in the chimney starter. Once they start burning into flames and turning ashy, carefully pour them over the unlit briquettes you placed in the ring. Add wood chunks on top, if desired. Open all bottom vents completely.
4) Place the center section on top of the bottom section, and place the water pan on top. Fill the pan with water and lay in the cooking grates. Clean the top cooking grate with a wire brush. Lay the brisket, with the fat side down, on the top grate. Put the lid on the smoker, with the top vent wide open. Place a thermometer in one of the vent holes in order to watch the temperature inside the smoker. Close the bottom vents to about halfway. The temperature in the smoker will fall to about 250 degrees, at which time you will close the bottom bents 3/4 of the way.
5) Your brisket will take about 1 1/2 hours per pound to cook properly. The internal temperature is the most important indicator of doneness, where it should reach 190 degrees in the thickest section of the meat. You should not have to add charcoal through the whole cooking process. Just adjust the bottom vents occasionally to maintain the temperature between 225 and 250 degrees fahrenheit. You may need to refill the water pan (use warm water) sometime through the second part of smoking.


6) Once the internal temperature of the thickest part of the brisket reaches 190 degrees, remove it from the smoker, and lightly wrap in two layers of aluminum foil. Place the brisket in a cooler (with no ice), and let rest for about 3 hours. This allows the brisket to further tenderize while it stays hot in the cooler.
7) When ready to serve, unwrap the brisket, preserving the juices. Pour the juices into a bowl for serving, or use these juices to make a barbecue sauce of your choice.
8) Slide a small knife between the two sections, and separate the muscles. Trim any excess fat from both sections and slice the meat of the bottom part against the grain. The top section is best chopped up for sandwiches, or just eating. Serve warm with the juices or barbecue sauce on the side.
What you end up with is the finest barbecue beef brisket anywhere. Enjoy.

It's that time of year again. The sun comes out and our thoughts turn to barbecues and eating outdoors to make the most of the great weather. For many of us, we unearth the old charcoal grill, still covered in old dirt, grime and grease from the last barbecue of the previous year and wonder whether to try and clean it up for one more season's use or whether we should just go out and buy a new one.
More and more buyers are turning to gas grills as a quicker, cleaner and more convenient way of cooking outdoors.  Dealing with bags of charcoal, special lighter fluid and erratic cooking temperatures isn't something that appeals to very many of us. Well, you'll be glad to hear that there is a solution. Gas grills have been around since the 1960s but it's only in the last few years that they have been developed into the user friendly cooking powerhouses that they are today.
The main benefits of gas grills compared to charcoal versions are:

Ok, now you're convinced that a gas grill is the type you want, how do you choose between them? There are so many types on the market at vastly different prices.
First, decide whether you need a large unit with lots of grilling area, side warmers etc that will stay at home either in one spot or be wheeled around but won't ever be taken on trips with you.


If you plan to take your grill on camping trips, tailgate parties or in your RV, you will need a portable gas grill.
Think about the construction. The more expensive grills will be made of stainless steel. This is easier to clean and will last many years. Less expensive grills will be steel with a baked-on enamel finish. This is second only to stainless steel. Enameled grills are still tough and easy to clean but are prone to the enamel getting chipped and corrosion getting at the steel underneath. The cheapest gas grills will be made of painted mild steel. They look nice when new but the paint soon burns off and rust sets in, meaning that the lifespan of these grills is not much more than a charcoal grill.
If you want a portable gas grill, you'll have no choice but to buy one that runs on bottled gas. Buy a spare bottle so there is never any risk of running out of gas at an inconvenient moment. As soon as possible after you use up a bottle of gas, get it changed for a full one.
If you're going for a grill that is located in a permanent position at home, you could consider a natural gas version that runs off your home gas supply. The gas is much cheaper and you'll never run the risk of running out at the wrong time. The only downside is that you'll need a certified gas engineer to run the pipe work from your home to the grill.

Maine lobster feeds on fish, small crustaceans, and mollusks. It thrives in cold, shallow water. Its enemies include codfish, haddock, flounder, and other lobsters. Maine lobsters molt two to three times per year until they are fully mature, sometime between ages four and seven. When a lobster nears its molting stage, it will start to grow a new shell underneath its current one and the outer shell will darken. The line running along a lobster's back begins to split and the two halves of the shell fall away. The inner shell is very soft and takes a couple of weeks to harden.


Female lobsters store sperm from male lobsters to fertilize their eggs later. When a female is ready to mate, usually right before molting, she looks for the den of a male to visit. Contrary to popular belief, lobsters do not mate for life. When a female is ready to molt, she will do so in the den of her chosen male. After the molt, the male will flip her over and get on top. The male has a pair of hardened fins on the underside of his tail that match a pair on the female. The sperm is transferred in a viscous blob down the fins into the female. The outside edge of the blob hardens to block the opening and store it in the female. Usually, the female will remain in the male's den for a few days while her shell hardens fully. Lobsters are very vulnerable after molting so they like to remain in hiding away from predators. It is difficult to estimate a lobster's age because they molt, but many lobsters live for up to fifty years.


A Maine lobster's body is very unique. Instead of chewing its food in its mouth, a lobster chews it in his stomach. Three teeth-like grinders called a gastric mill perform this operation. Can you imagine how much faster you could eat if your stomach chewed your food? Since a lobster doesn't have to bother chewing with his mouth, he uses it for other tasks like burrowing, carrying small rocks, or pulling himself around if he loses his claws and legs in a fight. Lobsters are able to grow back appendages it has lost.

 Wouldn't that be a handy ability to posses?  Two bladders located on either side of the lobster's head not only work to release waste, but also communicate by scent who and where the lobsters are. Lobster's project their urine like a fire hose in front of them to warn a rival or encourage a potential mate. They also pee at the entrance to their dens to announce they are at home.

Then, it's time to prepare the lobster. Bring a pot of water to a high boil. If you like, you can add spices or lemons to the water as well. Make sure your lobster is still alive, for it may not cook properly if it is already dead. Carefully clip the rubber bands off the lobster. Pick up the lobster, using a kitchen towel if you wish, and place head first in the boiling water.


For those of you who are a bit squeamish about killing a lobster, his brain is the size of a grasshopper and is not formulated to feel pain. If you don't mind stepping on a bug, you shouldn't mind killing a lobster. If you do, have your significant other put it in the water.
Cover the lobster and boil for fifteen minutes (for a one to two pound lobster). The lobster shell will turn bright red and the tail will curl when the lobster is done. How can you tell if it is cooked properly? Try tugging off one of the small walking legs. When the lobster is cooked it will come off easily. The meat inside the lobster will be firm, white, and opaque. To be completely sure, use a meat thermometer to measure the internal temperature of the lobster. It should be at 180 degrees.

This recipe incorporates the four basic food groups in a tasty Italian meal that's sure to please the entire family anytime of the year.
Ingredients
• 1 pound of fresh pumpkin, steamed and diced
• ¾ cup Arborio rice
• 2 cups chicken stock
• 1 tsp thyme
• 4 Tbsp butter
• ½ cup Parmesan cheese, grated
• ¼ cup chopped parsley
• Sea salt and fresh ground black pepper to taste
• 6 spicy Italian sausages
• 3 red bell peppers, seeded and sliced thickly
• 3 cloves garlic, minced
• Olive oil for sautéing


Method
1. Place rice, chicken stock, thyme and diced pumpkin in sauce pan with tight fitting lid. Bring to a boil, cover and reduce heat to low. Cook for 20 minutes. (A rice cooker may be used.)
2. Remove from heat; add butter, parmesan cheese, parsley, salt and pepper. Fluff with a fork until all is distributed. Keep warm.
3. While rice is cooking, warm a skillet over medium high heat, add oil and warm. Cook sausages until browned on all sides and nearly cooked through. Sausages will continue to cook while peppers are sautéing.


4. Move sausages to the edge of the skillet and reduce heat to medium. Add peppers and garlic and sauté until peppers are fragrant and al dente.
5. Salt and pepper to taste and serve over warm pumpkin rice.

Lamb Karahi is a robust but simple Pakistani meal with a stunning flavor. However the beauty of it is the fact that it is less time consuming than the traditional Indian curries, the meat and spices are not browned, but blended and then simmered gently.

Lamb karahi can be made from either the leg or the shoulder of lamb, the shoulder is fattier and also more flavorful, whilst the leg is more solid and meatier. The karahi is the name of the traditional Pakistani cooking dish, but it can be cooked in a frying pan. The amount of garlic in this recipe is not a typo, it is fifteen cloves.


Ingredients
1½ kilo of lamb.
2 tablespoons of ghee or clarified butter,
3 large onions chopped finely,
Tin of Italian plum tomatoes,
15 cloves of garlic,
A thumbful of peeled fresh ginger,
1/3 pint of water,
1 heaped tablespoon of ground coriander,
1 tablespoon of cumin,
2 teaspoon of chilli
1 tablespoon of paprika,
2 teaspoons of turmeric,
4 red fresh red and green chillies liquidised in a little water,
8 ounces of frozen spinach defrosted and pureed,
1lb of fresh spinach,
1 tablespoon of Garam Masala (recipe below)
A bunch of fresh coriander.


Garam Masala
Ingredients
1 tablespoon cardamom seeds taken from the green cardamom pods
2 inches of cinnamon stick,
1 teaspoon black cumin seeds
1 teaspoon whole cloves,
1 teaspoon black peppercorns
1/4 nutmeg,

Method
Bone and cube the meat into one inch cubes. Fry the onions in the ghee until they are soft and translucent. Place into the blender with a tin of tomatoes, the garlic and ginger and water. Puree until well blended and pour into a casserole dish with a little salt and add the meat and the spices and place in the oven. Simmer slowly until the dish darkens and the ghee rises to the top of the dish. Once this has happened add the chilli purée if this is too hot for you use fewer chillies. Add the spinach puree and return to the oven for fifteen minutes. At the last minute add all the fresh spinach and cook for five minutes, then add the garam masala. Place the curry in a serving dish and add handfuls of chopped fresh coriander.


To make the Garam Masala
Dry roast the whole spices in a heavy based pan for about three to five minutes, be careful that they don't burn, they are ready when they smell aromatic. On no account leave them because if they burn they are ruined, don't take your eye off the ball. Place in a spice grinder and grind to a powder add the freshly grated nutmeg.

This is the night mom takes the kids skating or to the movies and dad invites the guys over for a friendly game of Texas hold'em. Dad, you can use the crock pot and start cooking the pork before you head off to work in the morning. Once you're home from work make the gravy in the blender, warm the tortillas and chill the beer.
This recipe is a take-off on country style ribs with green chili gravy that was popular in Houston around the mid 1990s. The ribs were stewed with onions and garlic and the resulting juice was used in the preparation of the gravy. Toasted corn tortillas were used for thickening the gravy and added that little maza flavoring. Roasted poblanos and cilantro were added to produce the green chili in the gravy.


* Deep dark green poblano chilies are as large as green bell peppers, mildly spicy with a lot of flavor. The best way to cook them is to roast them over a fire or in the oven. Just hit them with a little olive oil which will draw the heat of the oven to them, place them on a baking pan in a 350° F. oven for about 10 minutes, turn them over, and roast the other side for 10 minutes. They should be blistered or charred on the outside. Place the chilies in a plastic bag for 10 minutes to steam, then scrape off the outer skin. Slit open and remove the seeds and stems.
Buy a pork shoulder roast. It will cost about $6.00 for 4 pounds and will be full of flavor and tender enough to pull once it is slow cooked. Fatten them up before you take their money. They won't mind a bit after you feed them this great dish.
Ingredients:


• 4 pound pork shoulder roast (Boston butt)
• 2 onions, chopped course
• 6 cloves of garlic, smashed and peeled
• 1 bay leaf
• 1 sprig of thyme or 1 tsp dried thyme
• 5 cups stock (beef, chicken or vegetable)
• 2 corn tortillas, toasted lightly on a dry grill or skillet, torn into pieces
• 2 large poblano chilies, *roasted, scraped and seeded as directed above
• 1 bunch cilantro
• 1 tsp cumin
• Salt and pepper to taste
• Chopped lettuce, tomato, and queso fresco (or grated cheddar cheese) for toppings
Method:


1. Place one onion on the bottom of a 6 quart crock pot.
2. Set pork roast on top of onion, cut roast in pieces if necessary.
3. Add remaining onion, garlic, bay leaf, thyme and stock. Set temperature to low and let cook for 10 hours or longer.
4. Remove meat to a platter and pull pork with 2 forks while poblanos are roasting.
5. Prepare poblano chilies as *directed above.
6. Pour crock pot juices into a blender. Add poblanos, corn tortillas, cilantro, cumin, salt and pepper to blender. Cover the blender and puree contents until smooth.
7. Return gravy to crock pot, add back the meat and turn the temperature to warm.
8. To serve, toast a tortilla in a dry skillet, spoon pulled pork and gravy into tortilla, add lettuce, tomato, and queso fresco or grated cheddar cheese. Fold up the bottom and then the sides like a burrito.

Combine the cream of celery soup, milk, tuna, and peas. When mixed thoroughly, pour into a 1-quart casserole dish that has been sprayed with nonstick cooking spray. Sprinkle the potato chips evenly over the top of the mixture. Bake at 375 degrees for 25 minutes.


Yield: 4 servings.
EASY BEEF AND TATER BAKE
1 lb lean ground beef
1 tbsp instant minced onion
1/2 tsp salt
1/8 tsp pepper
1 pkg. (1 lb) frozen shredded potato nuggets
1 can (10 3/4-oz)condensed cheddar cheese soup
1 can (10 1/2-oz)condensed cream of mushroom soup
Crumble the ground beef into 2-quart casserole. Place in the microwave and cook 5 minutes, stirring after 3 minutes. Drain off fat.

Sprinkle the onion, salt, and pepper over beef. Add the potato nuggets. Mix soups together and spoon over the potatoes. Cover. Return to the microwave and cook 14 to 16 minutes. If your microwave does not have a turntable, turn the dish 1/2 way around after 7 minutes.


4 to 6 servings.
